Let’s face it, Father’s Day is often the forgotten parents’ appreciation holiday. Mother’s Day always steals its thunder with its flowers and chocolates and breakfast-in-beds. By the time Father’s Day rolls around, people have already Instagrammed their cutest picture with Mom and are much too busy in summer mode to fuss over what to get Dad. Another tie? A hammer to replace the one he lost or maybe some grilling utensils? You know… MANLY things!
But you know what, men like chocolate too. So here’s a dessert that I’m pretty sure will knock your dad’s socks off (those socks you got him because you couldn’t think of what else to buy). These grown up chocolate chip cookie sandwiches are sprinkled with smoked sea salt and filled with a whiskey frosting. To be honest men, women, and children (over the age of 21) can all enjoy this delicious treat! Cause GAH dad, why does it always have to be about you??
This chocolate chip cookie is my no-fail, one bowl go-to recipe. When I’m really craving a good chocolate chip cookie but want it LIKE NOW, I make these. There’s no need to soften the butter or dirty multiple bowls. Just melt the butter in a heavy saucepan and then dump in all the other ingredients. I kid you not, it’s that easy. I came up with this recipe one night during college and it has served me well. The addition of sea salt to the cookie just makes it that much better.
If you can’t find smoked sea salt, regular sea salt is perfectly fine or even some kosher salt if you don’t want to splurge. But really, YOU WANT TO SPLURGE on this.
This frosting is AMAZING. If your dad is more of a Scotch fan or favors another liquor like amaretto, Bailey’s, or bourbon, those would all be equally great. But I gotta stick to good ole Tennessee Jack Daniel’s. Of course you can always be no fun at all and make this with vanilla extract. Just kidding, vanilla extract is made from alcohol too.
Enjoy this with a tall glass of ice cold milk and your dad will be grateful that you spared him from another hideous tie!
Grown Up Chocolate Chip Cookie Sandwiches
makes about 10 cookie sandwiches
- ½ cup (1 stick) unsalted butter
- ⅓ cup sugar
- ½ cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 ⅓ cups flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 4 ounces good quality semisweet chocolate, chopped
- sea salt
(1) Preheat oven to 350° F.
(2) In a medium saucepan, melt the butter over medium heat.
(3) When completely melted, remove the butter from the heat and add the sugar, brown sugar, egg and vanilla. Mix together with a wooden spoon until thoroughly combined into a creamy mixture.
(4) Dump in the flour, baking soda, and salt. Stir together.
(5) Add the chocolate chunks at the end. Make sure the dough is not too hot or else the chocolate will melt.
(6) Scoop out into heaping tablespoon-size mounds and place onto a cookie sheet at least 3 inches apart. Sprinkle a pinch-ful of sea salt over each cookie mound, then bake for 8-10 minutes.
(7) Move cookies onto a wire rack and let completely cool.
(8) Assemble cookie sandwiches by spreading 1 tablespoon of whiskey frosting (recipe below) onto the flat side of one cookie and top with another cookie.
makes about 1 cup
- ½ cup (1 stick) unsalted butter
- 1 ½ cups powdered sugar
- 2 tablespoons whiskey (recommended: Jack Daniel’s)
(1) Place the butter and powdered sugar in the bowl of a stand mixer attached with a paddle attachment. Beat on medium for 3 minutes until completely smooth.
(2) Turn the mixer to low and add the whiskey. Continue to beat for another 2-3 minutes. Set aside until ready to fill cookies.
